This chicken was always one of my favorites that my Mom would make. It's crunchy, easy, and fast. These sweet potato fries are my favorite side to pair with it. Each serving of this meal is less than four dollars; healthier and cheaper than the fast food alternative!
Preheat oven to 350.
Peel and slice sweet potatoes into french fry shape. Throw into a large bowl and toss with a bit of cornstarch and salt. Either spray cooking sheet with nonstick spray or toss fries in a splash of oil. Lay fries on cookie sheet, take a pinch of sugar and distribute over them. Bake in oven for 20 minutes.
Once potatoes are in the oven, we deal with the chicken. Pour cornflakes in a large bowl (you can use the same one from the fries if you're lazy like me!) Here's the fun part- crush cornflakes. You can use your hands or the bottom of a glass. Get messy :)
Place chicken on a plate. Spice with paprika, onion and garlic powder, salt and pepper and the red pepper if you like some spice. I usually spice pretty liberally because corn flakes are known for their crunch but not flavor.
Put egg in a medium sized bowl. Scramble with a fork.
Dip each chicken piece first in the egg, coating both sides and then in the cornflakes. Smash into the cornflakes really well. Place in baking pan or cookie sheet. Drizzle with melted butter. Bake for about 30 minutes or once the internal temperature is 165; unless you want chicken sashimi.
Back to the fries, after 20 minutes, flip them on sheet and place back in oven for another 20 minutes.
For a bit of extra crunch, turn off the oven and leave them in with the oven door cracked for a few minutes. I don't know why this works. Science.
Notes- You can use any cornflake-like cereal. I really want to try this with Honey bunches of Oats for a different flavor. Also, try different spices and experiment!
Pro-tip-If you set up all the ingredients first, this cook times out well.
