Flank Steak Barbacoa

I feel weird about calling this a recipe because it's only two ingredients and a crock pot. The results though are succulent, flavorful and beyond delicious. Below, I've listed the ingredients and my favorite way to eat this. I tend to get between 8-10 servings of this for less than $3.00 a serving. This photo and the original recipe is from my best friend Mel. Every time I've eaten this, I always forget a picture because I'm too busy digging in.


  1. Place flank steak in the crockpot. Pour salsa over steak.

  2. Cook on low for 6-8 hours. Take meat out and cut against grain. Or shred if you prefer longer pieces.


My absolute favorite way to eat this is with scrambled eggs. Sometimes I add salsa and cheese into the eggs as well. Delicious with homefries. Amazing breakfast burritos.


Tacos/Burritos/Taco Bowls are also amazing and you can feel free to get creative with the toppings. I haven't tried making it into quesadillas or enchiladas yet, but you totally could.
