Recently made this chunk of comfort food, straight out of my childhood and it totally holds up. The best part is that it can be considered a pantry meal since you probably have everything you need already! These are great served over white rice or with some roasted veggies as seen here. I found the sweet potatoes balanced it nicely.
Combine equal parts Ketchup and BBQ sauce in a bowl and add a couple spoonfuls of brown sugar. Mix well.
In another bowl, season ground beef with salt and pepper. Add eggs and mix with your hands to create an even consistency. Get messy! Add a few spoonfuls of the sauce and mix in.
Make the meatballs! You can bake but I like to sear them. Get a large pan and spray with non stick spray. Heat pan and with your hands, add meat balls to pan.
After you've turned them over and they are around 80% cooked, slather the sauce all over them and reduce the heat. Cook for about 8-10 minutes
At this point, make another smaller batch of sauce.
Using a slotted spoon, take the meatballs out of the pan and into a large serving dish where they should be slathered with sauce again. The word slathered is so fun lol.
Serve up over rice or veggies and enjoy!
I made the meatballs and they were DELICIOUS. Super simple, too! Cleanup was a breeze! 10/10 would recommend.
