Whole Slow Cooked Chicken with Parmesan Potatoes


This chicken tastes JUST like Costco rotisserie chicken, which is delicious. Last weekend, we went out to eat and someone ordered the half chicken for $22 dollars, and they didn't love it! At less than $2.50 a serving, this chicken is a win both the first night served and for leftovers! Note- The potatoes pictured are not the parmesan ones. I keep eating the parm ones before I take the photo. Anyways, this meal is incredibly budget friendly and also it will make you feel like a master of domesticity. Serving a whole chicken makes me feel like such a boss.




Chicken Instructions

  1. Mix the spices in a small bowl.

  2. Rinse the chicken and take any remaining giblets out with a fork. The first time I did this was very intimidating; It's easy...be brave and stick that fork up there. :)

  3. Place the chicken in the crock pot. Pour the mixed spices and try to spread evenly over the chicken. Bonus points if you can get some inside!

  4. Cook on High for 4-5 hours on high heat or 8 hours on low heat.

  5. Once you are ready to serve, take chicken out and carefully place in baking pan. Broil for 3-5 minutes to get the skin nice and crispy.

  6. Once chicken is broiling, pour the remaining liquid in the crockpot into a sauce pan, heat over medium. Add flour to thicken and salt and pepper to taste. Ta-da! You made gravy!

Potato Instructions

  1. Preheat oven to 400. Cut potatoes into quarters and place in large bowl.

  2. Add spices and toss potatoes to coat. Add Olive oil and toss. Add powdered Parmesan cheese and toss.

  3. Grease a baking sheet and add a sprinkle of flour. Spread potatoes on sheet. If any clumps fall off the potatoes try to put them back on. Pour remnants of bowl on top.

  4. Bake for 30 mins. Take out and use spatula to move potatoes around and flip them. Pour shredded Parmesan on top. Try to spread evenly. Bake for an additional 10-15 mins.

I like to serve this dish with some green beans to balance it out. Let me know when you make your first whole chicken!

I can tell you that I have personally had this dish prepared by Melissa and was out of this world. The chicken was far more juicy than even Costco rotisserie.
